Ingredients

  • 2 kilo
  • MONTEREY PORK SHOULDER
  • 60 gram
  • Garlic, crushed
  • 100 gram
  • Shallots, sliced
  • 60 gram
  • Tanglad or lemongrass, tied
  • 100 gram
  • Green onion, sliced
  • 80 gram
  • Coarse salt
  • 20 gram
  • Vetsin
  • 10 gram
  • Bay leaf and black peppercorns
  • 4 pc
  • Star anise
  • 1 liter
  • Soda, lemon lime flavor
  • 1 cup
  • MAGNOLIA Nutri Oil, for brushing
  • 1 cup
  • Soda, lemon lime flavor for brushing

How to make it

Step 1

In a bowl, combine the next 9 ingredients and season pork shoulder with mixture. Strain and rub remaining seasoning on the skin.

Step 2

Roll pork, truss and place in a roasting rack. Bake in a 350F oven for 20 minutes. Brush skin with a mixture of equal amounts of oil and lemon lime soda.

Step 3

Cook the pork again for another 3 hours or until the skin is nicely browned and crisp.
