For the meat and chilli lovers out there, this one’s for you.
In a medium sauce pot, sauté bacon in its own fat. Add beef and onions. Cook meat until brown in color. Add beef stock and kidney beans. Simmer for 45 minutes to an hour.
Add diced tomatoes, tomato sauce, corn kernels, chili powder and sugar. Cook for another 20 minutes.
Remove from heat and add cilantro. Top with grated cheese just before serving.
