Preheat oven to 200F. In a bowl, combine salt, pepper and oil. Brush the mixture to the prepared rolled roast pork. Slowly roast the pork until it reaches the internal temperature of 160F, for about 1 hour. In a saucepan, combine maple syrup, water, brandy, cinnamon and raisins. Mix everything together and let boil. Set aside. To assemble, in a large platter, place the roast pork and pour the maple raisin sauce on top. Garnish with assorted fruits such as grapes if desired.
