Chorizo Pizza

Ingredients

½ kg Purefoods Baron All Purpose Flour
½ T active dry yeast
1/3 cup San Miguel beer Pale Pilsen
¾ cup warm water
1 t salt
¼ cup extra olive oil
1 cup store-bought pizza sauce
300 g Monterey Chorizo, crumbled and pan fried
2 cup mozzarella cheese, grated
1 cup cherry tomatoes, sliced in half
½ cup fresh basil leaves, loosely packed
 

Procedure

To make the pizza dough: Dissolve the yeast in warm water and rest for 10 minutes. Put the flour in a bowl. Shake the beer gently then add flour. Mix, then add water and the yeast mixture. Mix again for 10 minutes using mixer. Once the dough is compact, form a hole in the center and salt and extra olive oil. Mix again for another 10 minutes. Place the dough in a tray, cover with plastic and rest for 45 minutes. Dough should be double in size. When finished, divide the dough into desired weight. Allow to rest for another 45 minutes. Dust the counter top with flour and roll out each dough ball into desired size, shape and thickness. Spread some olive oil ont crust and puncture all over using fork. Pre-bake crust for 3-5 minutes in a pre-heated (200 C) oven.

Spread pizza sauce on the pre-baked crust. Top with crumbled chorizo, slice tomatoes, grate cheese and whole basil leaves. Bake again in oven for 8-12 minutes until cheese is melted.

Slice and serve immediately. Makes 2-3 pizzas.
